Christmas dinner

Christmas dinner. We had some very yummy food for the holiday.
Christmas eve - filet mignon marinade, stuffing, baked potato, cranberry sauce, and cheesecake.
Christmas - chicken marinade, stuffing, mashed potato, cranberry sauce, brussell sprouts, and cheesecake.

Brussel Sprouts

A very yummy snack we have been having is brussel sprouts.

We steam them. Then we brown them in a little oil with some barbecue spice. They are awesome. We had a holiday dinner, and the brussel sprouts were the first to go. Everyone even went back for more. Even our son who does not like testing new things to often loves them.

A very yummy and healthy snack.

Steak and veggies

Today we had steak and veggies for dinner.

We put steak in a pan cut into slices. Fry it up with some barbecue seasoning. We steamed some cauliflower and broccoli, and served it up as a stir fry.

It was yummy!

Steamed Veggies and spices

We have been eating some very yummy veggies.

We get either cauliflower, broccoli, brussell sprouts, and cabbage. We steam them. Then we put them in a pan with a tiny bit of oil and fry them up with some barbecue seasoning.

They are so super yummy.

Tofu and Veggies

I really enjoy tofu super firm and geneal tso sauce.
We fry up to tofu and then pour in a little sauce to finish frying it. When it is done we pour a little more sauce over it.
We have steamed cauliflower, brussell sprouts, or broccoli with it.
It is very yummy and healthy.

Snacks

We have been looking for some good snacks lately.

I really like snacking on apples, watermelon, and pears lately.

I am going to look up some new stuff. I am tired of eating out and getting food that is good sometimes and bad others. It is not worth it. Stay tuned....

Snacks

I have not been posting much. I am getting back into it.

I have now lost 41.6 pounds in 23 weeks. I have gotten into eating the same thing often. I am going to try to find new and different things to eat.

I still very much like laughing cow cheese. I eat it on rice crackers, which are pretty good. We get the whole food ones in Wasabi and Tamari.

Weight watchers has some pretty yummy cinnamon square, cookies, and zinger type snacks. I have liked the ones I have tried.

Beef Jerky is another pretty good snack, lots of chewing and not to high in fat.

Nachorific chicken

I have made this chicken several times. We like it a lot. I even made it for my mother for Mother's Day! It is a hungry girl recipe.

It is chicken stuffed with refried beans, and cheese. On the top of it you have taco sauce, seasoning, and chips. The weight watcher point plus value is 6.

Good low fat snacks

I really have not posted yet, and am going to start now.

We are on Weight Watchers and have been for 9 weeks. We do not think of it as a diet, but a great change in our lifestyle. I have lost 19.6 pounds so far.

We have tried to find some yummy low point snacks.
1. Laughing cow cheese is very good, and with some rice crackers makes a great low point snack.
2. Weight Watchers makes a ice cream bar that is very good. To me it tastes like a snickers bar frozen.
3. Wonton or Egg Roll wrappers with some veggies and a tiny piece of laughing cow cheese, baked for a few minutes. This is my favorite snack and very low in points.
4. Hormel chili on a low fat tortilla baked for a few minutes is great.

Yummy easy recipes

I am going to try cooking new easy recipes each week. I rarely cook and am going to make an effort to find new recipes that are good and easy. I am trying to eat a healthy diet. I want to incorporate vegetable, salad, soup, and chicken recipes into my diet. I just want to eat healthy and at home. Since I do not cook often I want to try to find recipes that we like and are healthy. Check back often for new recipes.
