Yummy holiday cooking and back on track
The holidays were fun. Now that I am home full time I can do way more fun things with my family. Over the holidays I made magic cookie bars, chocolate chip cookies, cookies with colored chips, and more. All of them were very yummy. We also had nachos, beef stew, and other tasty dinners.
I have the house back in order. Now it is time to return to healthy eating. I want to come up with some new healthy yummy dinners and snacks for my family to enjoy. I am going to start making something tasty with my son as well each week. I want to get more into slow cooking as well. I have not used one in a long time.
Tonight we are having tofu and tortillas with coleslaw on them.
We use super firm tofu and fry it up in a bit of extra virgin olive oil. Then we put some sauce on it. I like general sauce, but my husband likes something with spice to it. We put the tofu on tortillas and put some coleslaw (no dressing) on it. We eat it like a taco. It is very yummy and very healthy. On Weight Watcher it is 9 points for two tacos, and that includes an entire pack of tofu so there is still some tofu to eat on the plate by itself.
I will probably have a skinny cow ice cream after for dessert.
